Non stoppable combos, thats my kryptonite and the way to make me stop playing a game altogether.
Can it be something I hate ABOUT fighting games, and not necessarily IN them? If so, then I tend to really dislike the communities encircling the individual fighting games. They typically seem full of arrogant and socially inept persons. I used to watch a lot of FGC tournaments online and I never found a single person I actually liked. Not to say they were all jerks, but many just had no standout likeability to them.
If I have to say something IN game, I would say, I hate boss characters which have some sort of full health regeneration. Somebody like Gil in Street Fighter III is annoying, but he can only activate it if he has a super, and you can kick him out of it. A character like the titular character in the game Eternal Champions is an absolute nightmare.
Usually for me, it's the opposing fighter's AI constantly blocking because you're "Over-Aggressive".

The worst thing I hate in fighting games is the lack of good tutorials in many fighting games. This was a sort of barrier for me to get into these games in any sort of serious not just 'mash buttons until I win' sort of mentality. It wasn't until I played the Blazblue and Undernight tutorial modes that I actually started to understand how to play these games (although I'm still not actively great at them but just enough to get combos and other defensive options down).

The need to have so many loli and/or thot characters per game to appeal to the crowd that likes lolis and thots.
Ex. all the creepy SNK ****** girls, Elena's random inclusion in USF4, Black Widow being made as DLC for MVCI, etc.
-SNK boss syndrome
-Broken/Cheap AI non-boss characters (Setsuka's AI in SoulCalibur 3 is an example)
-DLC characters being the most wanted ones (Sakura in Street Fighter V)
-Infinite combos (I have a Love-Hate relationship with them)
-Non-Playable characters

Cheep Boss Fights like Final Bison in Alpha 3. That guy's an irritating eyesore to fight and worse, I fought TWO of him in tournament mode at one time. THAT was a hell-ish experience I forgot about it until now. I've heard about SNK Boss Syndrome and they say Bosses like Igniz and Omega Rugal are even worse than the Street Fighter Bosses.

Honestly, I have never had great difficulty in defeating the bosses of SF Alpha / Zero, Shin Bison and Shin Gouki, they are much more balanced bosses, compared to some bosses of the various King Of Fighters, like the various Zero, Igniz and shit varies of this kind.
