My pick is really unorthodox, but I'd say Phoenix Wright from UMvC3 was the most fun fighter I've played so far. Isabelle in Smash Ultimate being a close second for me.

It's either gonna be Patchouli Knowledge or Sakuya Izayoi from Touhou 12.3: Hisoutensoku. Both characters have the potential to play a bit of defensive keep away, yet they both fill my niches of when I wish to play a bit more aggressively or a bit more defensively than I normally would.
