For 3D, I'd say Generations.
For 2D though.. I'm pretty split between Sonic 3 & Knuckles and Sonic Mania, Although i'd say that S3&K just about barely moves above Mania for me at the moment.

Sonic Adventure 2 Battle! I played so much of it as a kid some of the songs I'll always remember OH and the Chao Garden!

Probably Sonic 2, 3, Generations, or Advance.

2 and 3 because they are pretty much peak 2D Sonic. Sonic 1 and CD are good but 2 and 3 really hit the spot for me.
Generations 3D Levels feel really fun. They have speed, and I don't find the 2D Parts too bad. Just boosting through things sometimes feels great. (And uh, the 2D Levels are ok.)
Now, Advance, I like because it's simple 2D fun. I play it often (Because I have a GBA Emulator on my school Chromebook), and it's good! Though mainly this one and not Advance 2 and 3. 2 has very annoying bosses sometimes (cough cough Sky Canyon) and 3's level design kind of sucks.

Sonic the Hedgehog & Sonic the Hedgehog 2 for the Sega Genesis were my favorites. I don't quite have as much nostalgia for Sonic 3, but its not bad. I love how Sonic & Knuckles can be used on Sonic 2 & Sonic 3. I wish that it could also be used in Sonic 1.

Even though I really like Sonic Adventure 2 story more, the world exploration featured in Adventure 1 has so much nostalgia for me and I think I prefer it for that aspect.
