I've heard that in order to make a One Hit KO move you must set the opponent's life to zero when the attack connects. However, I do not know how to do this properly. So, how do I set the target's life to zero when they get hit by an attack?

maybe try just setting the damage to an obserdly high amount? i dont know how this works
You could use life set to set their HP to zero or you could simply just make it do a crazy amount of damage. As always other characters might have safeguards to prevent this but look for bugs and keep experimenting!
OK
Or use the lifemax trigger.
money, love, dubious, right, family, work, argue, talk, happiness, your parents, your wife, buy, sell.
You could just increase the damage of a certain move to be 9999999999999 or something.
Not sure how this is going to work but it depends on how you code it. But for now increase the damage input.
