Burning Osaka from Capcom vs SNK 2
Mementos from super smash bros ultimate. The combination of unorthodox platforms and unique shape of the stage really makes it feel interesting, and I personally think that the one slope in the middle shouldn't stop it from being legalized.
River from Virtua Fighter 5
I personally like Dhalsim's stage from Street Fighter II Turbo. The elephants are my favorite element.

This is sort of a knee-jerk response that would probably be a list if I thought about it more, but Space from Dragon Ball FighterZ has always stood out to me, in large part because of the track that accompanies it.

Field of Fate from Street Fighter Alpha 2. This stage is simply breathtaking.
It's got to be Grant's stage in Garou: Mark of the Wolves. It has atmosphere and that epic background music making it feel like you are fighting a legit boss
Probably the courtyard from MK1. It's just so memorable with such iconic music
My definite favorite is Field of fate from SfV its just got that epicness. I love it.

Any stage with rainy or night themes, it just gives that vibe of a chill fight.
Final Destination from Super Smash Bros., specifically Ultimate. Probably some of the best visuals in all of video games.
